Need: bunch of Spinach, 1 cup pre-cooked Basmati Rice, 1 garlic clove, 1 tsp whole cumin, half onion, pinch turmeric, half tsp salt, 2 tbsp olive oil

1. Finely chop the onion and garlic.

2. Heat the olive oil in a pan on a medium heat, adding the cumin when warm.

3. Add and saute the onions and garlic until soft. Add the salt and turmeric.

4. Chop and wash the spinach by placing in a bowl of water, picking out and letting drain.

5. Add the spinach, cover and stir well when wilted.

6. Gently blend if you have a hand blender.

7. Pour over the rice and stir in.
