Need: 5/6 baby potatoes, small pack of spinach, 2 garlic cloves, 1 fresh green chilli, small cinnamon stick, 1/2 tsp whole cumin, 1/2 tsp red chilli powder, 1/4 turmeric powder, 1/2 tsp coriander powder (optional), 1 tsp salt, 2 tbsp of olive oil
1. Wash and cut the potatos.
2. Heat the olive oil in a pan, when hot add the cumin.
3. Add the potatoes with the salt, tumeric, red chilli powder, coriander powder, stir and cover leaving to cook on a low heat.
4. Finely chop the garlic and green chillis, add and stir.
5. Discard the stems and chop the spinach placing in a bowl of water. Wash by picking out of the bowl and placing in a strainer, this way you leave the soil in the bottom of the bowl.
6. When the potatoes are tender, add the spinach cover for a few minutes so the spinach can wilt, stir and serve.
