Need: 1 packet of GITs ready mix, 2 tablespoons of oil, water according to packet instructions, for garnish, fresh coriander, grated coconut, 1 tsp mustard seeds, 1 tsp sesame seeds, 2-3 green chillis, 2 tbsp oil for frying
1. Find a large pot or steamer that you can use to put your tray or cake tin in.
2. Fill with water, cover and put on to boil so when you put the tray in the steam is hot.
3. Lightly grease the trays or cake tin with oil.
4. Make the batter according to the packet instructions, basically adding oil, water and stirring gently.
5. Pour into the tray(s) remember the mix will rise. It’s fine to cook half the batter first and half later if you have limited trays.
6. Steam on a high heat for 15 minutes.
7. Meanwhile wash, dry and chop the fresh coriander and chillis keeping seperate.
8. When the dhokla have risen take out and allow to cool before cutting.
9. Sprinkle over the coconut and fresh coriander.
10. Heat oil in a small pan on a medium heat.
11. Fry the mustard seeds, sesame seeds and green chillis.
12. While the oil is hot, carefully pour over the dhokla.
13. They can be gently taken out of the trays and mixed putting on a plate.
