Makes 8

Need: 8-10 baby potatoes or any other potatoes will do, 1-2 inch piece fresh ginger, 3-4 fresh green chillis, salt, 1 tsp whole cumin, 1 tsp of salt, a pinch of turmeric powder, fresh coriander, olive oil for cooking

1. Boil or steam your potatoes so you can mash them well.

2. Dry roast the whole cumin and when cool gently crush into a powder using a pestle and mortar, rolling pin or even placing in a clean towel and gently bashing with a jar of honey will do the trick.

3. Finely chop the coriander, ginger and green chillis, put in a mixing bowl with the turmeric powder and salt.

4. When the potatoes are tender, peel the skins and mash in the bowl, mixing well with all the ingredients.

5. Using your hands gently divide and roll into patties placing on a plate.

6. Heat 2 tbsp of oil in a frying pan on a medium-high heat and when hot add the tikkis, turning when lovely golden brown.

7. In the meantime you can put some yoghurt in a bowl, throw in some freshly chopped mint, add a little salt and serve with the tikkis when they are ready!
