Need: some cake layers, some frosting, Cheese Dorito’s, decorations, a birthday

For the cake layers, I went with this recipe that I found on epicurious and slightly modified the cooking time, see below for recipe.

For the frosting I went with this recipe and made double as I didn’t want to run out. I also didn’t put in vanilla essence and instead squeezed in more lemon juice modifying the recipe as follows:

* 1/2 cup butter, softened
* 1 cup sour cream
* 2 tsp lemon juice
* 1/2 tsp salt
* 4 cups confectioners’ sugar

Mix everything except the sugar well, slowly adding the sugar last.

For making the cake:

1. Cover the surface of your cake tray with a baking sheet that will be removed later.

2. Spread frosting in between your layers.

3. Spread a thin base coat.

4. Spread more frosting.

5. Decorate with whatever you feel like, from sparkles, tubes of chocolate, doritos!

White Cake layers:

* 2 cups all-purpose flour (spoon flour into dry-measure cup and level off)
* 2 teaspoons baking powder
* 1/4 teaspoon salt
* 12 tablespoons (1 1/2 sticks) unsalted butter, softened
* 1 1/2 cups sugar
* 2 teaspoons vanilla extract
* 6 large egg whites
* 3/4 cup milk

1. Combine the flour, salt and baking powder in one bowl.

2. Mix the egg whites and milk lightly in another bowl.

3. Mix the butter and sugar well, adding the vanilla extract last.

4. Alternatively add flour -> milk -> flour -> milk -> flour -> milk -> flour to the butter mixture, beating well after each stage.

5. Pre-hea the oven to 160°C and bake for 40 mins until toothpick in the middle comes out dry. Cover with foil and continue baking if not quite there.

6. Cool on a rack for 5 mins in the tray, loosed the edges and then gently take out, cooling completely.

7. Cut up layers and freeze or use.
